Savoury Pancakes with Sauteed Mushrooms!

So the idea of this recipe came in my mind when I was furious at my mom because of some reasons. I was super angry and because of this I had not a eaten a single bite of food which she made since morning.😂 And it was six in the evening and I wanted a quick fix. So a day before I invited my friends over for lunch and the leftover included some chopped vegetables and pancake batter. I thought of making something out of it. This recipe was inspired by a savoury waffle which I ate in one of my favorite restaurant in Ahmedabad. And this experiment turned out quite fruitful as the pancakes tasted amazing with savoury flavours and even my mom loved it ( of course she told me after a week about this as she tasted it while I was not in the room.) 😝

Recipe as follows.

For Pancake without Eggs.



You will need the following ingredients:

All Purpose Flour - 1 Cup
Baking Powder - 1 tbs
Milk - 1 Cup
Vegetable Oil - 1 tbs
Salt - a pinch
Sugar - 1 tbs
Cinnamon Powder - a pinch
Butter - for greasing pan

For quick and easy task mix all the dry ingredients through strainer and then make a well in between add all the liquid ingredients and whisk it well with good force. The Batter is ready. It should be thick enough to stay in the same shape as you pour it on griddle; it shouldn't be runny.

Pour a ladle full on the griddle with light greasing of butter and cook from both side till it turn golden brown. And your pancakes are ready.

For Sauteed Mushrooms

You will need the following ingredients:

Mixed Bell Peppers ( Red/Green/Yellow) - 1/2 Cup
Button Mushrooms (diced in large pieces)  - 1 Cup
Garlic ( finely chopped) - 2 tbs
Coriander (finely chopped) -for garnishing
Salt - to taste
Black Pepper - 1 tbs
Oregano - 1 tsp
Oil- 2 tbs

Heat a pan with oil in it. Add garlic and cook it until it turn golden brown.Now add Bell Peppers and saute for a minute. Now add mushrooms and cook it for 2-3 minutes. Now add salt,black pepper and oregano and mix it well and take it of from stove.

Now in serving plate, place the pancake and brush it with a little butter and spread all the vegetables on it. Garnish it with coriander and sprinkle a little pepper and serve it with crispy potato chips ( I used pringles .)

Tips-

  • Make the pancake once you are done with your vegetables this way both will remain warm.
  • Vegetables must not be over cooked, they are suppose to be crispy and half cooked.
  • For smoky flavour in vegetables heat the pan with oil at very high flame and on high temperature then add garlic, this will create a little fire in pan and that will give smoky flavour to it.
